Batate Bhaji Recipe
- 3 lrg Potatoes boiled, peeled
- 4 x Green chillies minced
- 1 tsp Ginger grated
- 1 tsp Garlic grated
- 1/2 tsp Mintleaves finely minced
- 2 tsp Coriander leaves finely minced
- 8 x Curry leaves minced, (8 to 10)
- 2 pch asafoetida, (2 to 3)
- 1/2 tsp Turmeric pwdr
- 2 tsp Lemon juice Salt to taste
- 1/2 tsp Cumin & mustard seeds
- 2 Tbsp. Oil
- Chop potatoes into medium pcs.
- Heat oil in a heavy saucepan.
- Add in seeds, asafoetida, allow to splutter.
- Add in ginger, chillies, garlic, stirfry for 1 minute.
- Add in mint leaves, curry leaves, stir.
- Add in potatoes.
- Add in salt, turmeric, lemon juice, stir well.
- Cook for 3-4 min or possibly until oil separates.
- Add in coriander, stir gently.
- Serve warm with puris, parathas or possibly phulka.
- (refer rotis, naans, etc.)
