Strawberry & Spinach Salad

  1. Brown pecans on a butted baking sheet at 350 degrees for 10 minutes.
  2. In a large serving bowl, mix together spinach and strawberries.
  3. In a separate bowl, blend together vinegar, salt, oil, mustard, sugar, onion and poppy seeds.
  4. (I use my Vitamix blender- it blends so smoothly).
  5. When you are ready to serve, toss in pecans.
  6. Gently toss dressing into spinach and strawberries before serving.
