Pierogie Casserole

  1. Cook taters -- drain off water.
  2. Mash taters with 1 stick butter, 1/2 cup sour cream and milk (as needed).
  3. Add salt & pepper to taste.
  4. Mixture should be slighty soupy.
  5. Cube & melt Velveeta cheese on low setting in microwave.
  6. Add to potato mixture.
  7. Cook & Drain pasta.
  8. Add 1 stick butter.
  9. Chop & Saute Onion with 1 stick butter.
  10. Layer Taters, Pasta, & Onions in 13 x 9 pan.
  11. Bake uncovered -- 350 degrees for 30 minutes.
