Cast-Iron Peach Cobbler

  1. Heat oven to 350 degrees F.
  2. Combine dry jelly powder, flour and sugar in small bowl.
  3. Whisk in 1/2 cup water.
  4. Combine fruit in large bowl.
  5. Add flour mixture; toss to evenly coat.
  6. Spoon into 10-inch cast-iron skillet sprayed with cooking spray.
  7. Mix baking mix, sour cream and remaining water just until blended.
  8. Drop into 6 mounds over fruit mixture.
  9. Bake 35 min.
  10. or until fruit mixture is hot and bubbly, and biscuit topping is golden brown.
  11. Cool slightly before serving topped with Cool Whip.
