Shrimp & Chipotle Alfredo
- 1 lb. fettuccine, uncooked
- 6 Tbsp. butter or margarine, divided
- 1-1/2 lb. uncooked large shrimp, peeled, deveined Safeway 1 lb For $8.99 thru 02/09
- 6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
- 1 cup milk
- 3/4 cup KRAFT Grated Parmesan Cheese
- 2 Tbsp. canned chipotle peppers in adobo sauce, finely chopped
- Cook pasta as directed on package, omitting salt.
- Meanwhile, melt 2 Tbsp.
- butter in large skillet on medium-high heat.
- Add shrimp; cook and stir 3 min.
- or until shrimp turn pink.
- Remove shrimp from skillet; cover to keep warm.
- Add next 4 ingredients and remaining butter to skillet; cook on low heat 5 min.
- or until cream cheese is completely melted and mixture is well blended, stirring constantly with whisk.
- Stir in shrimp.
- Drain pasta; place in large bowl.
- Add sauce; mix lightly.
