Pasta With Goat's Cheese and Walnuts
- 350 g penne pasta
- 125 g soft goat's cheese or 125 g cream cheese with herbs
- 50 g walnuts, roughly chopped
- 1 lemon, zest of
- 1 bunch chives, snipped
- 100 g rocket
- Cook the pasta according to packet instructions.
- Drain, reserving 2 tbsp cooking water, and return to the pan.
- Stir the cheese, walnuts, lemon zest, chives and reserved cooking water through the pasta.
- Season, mix in the rocket (the heat of the pasta should be enough to wilt it) and serve.
