Winter Carnival Casserole
- 2 Tbsp. corn oil
- 1/4 c. chopped onion
- 1/4 c. chopped pepper
- 1 lb. ground beef
- 1 lb. 12 oz. can tomatoes
- 1/2 c. Karo syrup (light)
- 1/2 tsp. salt
- 1/2 tsp. chili powder
- 1/4 tsp. pepper
- 1 bay leaf
- 2 Tbsp. cornstarch
- 3 c. macaroni or rice
- 1 c. shredded Cheddar cheese
- Heat corn oil.
- Add finely chopped onion and green pepper; cook until tender.
- Add ground beef; brown stirring often.
- Pour and save 1/4 cup liquid from canned tomatoes.
- Add remaining tomatoes, Karo syrup, salt, chili powder, pepper and bay leaf to meat mixture.
- Bring to boil.
- Cover and simmer 15 minutes.
- Blend cornstarch with 1/4 cup tomato liquid; stir into meat mixture. Bring to boil, stirring.
- Add 3 cups cooked macaroni or rice; pour into 2 quart casserole.
- Sprinkle with shredded Cheddar cheese. Bake for about 30 minutes at 350u0b0.
- Serves 6.
