Summer Fruit Cobbler
- 12 cup rolled oats
- 13 cup brown sugar, packed
- 14 cup whole wheat flour
- 3 tablespoons butter, softened
- 1 teaspoon cinnamon
- 14 cup almonds, sliced
- 6 cups peaches
- plum
- nectarine
- apricot, peeled, pitted and sliced
- 14 cup brown sugar, packed
- 1 teaspoon almond extract
- 14 teaspoon cinnamon
- 18 teaspoon nutmeg
- Preheat oven to 180C.
- Mix together topping ingredients, set aside.
- Stir together filling ingredients in a bowl and then place in a medium sized baking dish.
- Crumble topping over the fruit mixture.
- Bake for 30 mins or until fruit mixture is hot and bubbly and topping is golden brown.
