Stuffed Quail's Eggs Recipe beefa
- 1 can of Quail's eggs (available in asian markets)
- 1 tablespoon mayonaise
- 1 teaspoon chopped chives or any flavorful herb you have on hand
- 1/2 teaspoon lemon juice
- 1/ 8 teaspoon cayenne pepper
- 1 Tablespoon chopped parsley
- Drain and rinse Quails eggs in cold water.
- Let them air dry or pat them dry with paper towels.
- Cut the eggs in half and scoop out the yolks.
- Combine the yolks with everything but the chopped parsley and blend together with a fork
- Stuff mixture back into egg halves.
- Arrange on a platter and garnish with chopped parsley.
- Refrigerate until ready to serve.
- You can vary the filling with any herbs, chopped bacon, a little crumbled goat cheese, etc.
