Vinegar Cucumbers
- 1 whole Cucumber
- 3 cups White Or Apple Cider Vinegar (or Enough To Cover Your Cucumbers By 1/2 An Inch)
- 1 Tablespoon Sugar, To Taste
- 1 teaspoon Black Pepper To Taste
- OK, these are super easy and super yummy!
- Wash and peel your cucumber.
- Slice your cucumber in medallions (rounds).
- Set aside.
- In a medium-sized sealable container, pour in vinegar.
- Mix in sugar.
- The point is to cut the acidity, but not too much.
- You do not want these to be sweet.
- If you need more sugar, add more.
- Add pepper.
- If you love pepper, add as much as you would like.
- Just make sure you taste as you go.
- If you do not like pepper, you may reduce or leave out completely.
- Give it a good stir.
- Sugar should be dissolved.
- Add cucumber, put the lid on and refrigerate for at least an hour.
- I like when they sit overnight, they become extra vinegar-y and deliciously cold!
- (Sometimes I add carrots for fun!)
