Vinegar Cucumbers

  1. OK, these are super easy and super yummy!
  2. Wash and peel your cucumber.
  3. Slice your cucumber in medallions (rounds).
  4. Set aside.
  5. In a medium-sized sealable container, pour in vinegar.
  6. Mix in sugar.
  7. The point is to cut the acidity, but not too much.
  8. You do not want these to be sweet.
  9. If you need more sugar, add more.
  10. Add pepper.
  11. If you love pepper, add as much as you would like.
  12. Just make sure you taste as you go.
  13. If you do not like pepper, you may reduce or leave out completely.
  14. Give it a good stir.
  15. Sugar should be dissolved.
  16. Add cucumber, put the lid on and refrigerate for at least an hour.
  17. I like when they sit overnight, they become extra vinegar-y and deliciously cold!
  18. (Sometimes I add carrots for fun!)
