Wisconsin Badger Game Day Loaded Mash Potato Balls
- 1/2 lb bacon, cooked and crumbled
- 1/2 cup green onions, chopped (I use white onions, but chop extremely fine since I don't like green ones)
- 1/8 cup sour cream
- 1 egg, lightly beaten
- 2 cup cold mashed potatoes
- 4 oz cheese curds (I use cheddar, but you can use a different flavor if desired)
- Mix mashed potatoes, sour cream, onion and 1/4 cup of the bacon crumbles.
- Shape mashed potatoes into 1 inch balls.
- Place a cheese curd into the potato ball and mash potatoes around it until the curd is completely covered.
- Dip them into eggs, then roll around in the remainder of the bacon bits.
- Place onto a cookie sheet or baking dish.
- Bake at 350 for 15 to 20 minutes or until the cheese is oozing out.
