Potato, Bacon and Avocado Salad

  1. Cook potatoes in a saucepan of boiling water until tender.
  2. Drain and cool before slicing in half.
  3. Meanwhile, cook bacon bacon in a pre-heated frying pan until crisp.
  4. Gently combine potatoes, bacon, eggs, avocado and rocket in a large bowl.
  5. Arrange salad on a serving platter and drizzle with dressing.
  6. Serve immediately.
