Smoked Salmon Scrambled Eggs
- 10 large eggs
- 1/2 c. low-fat (1%) milk
- 1/4 c. snipped fresh chives
- Pepper
- 1 tbsp. margarine or butter
- 6 oz. thinly sliced smoked salmon
- In large bowl, whisk eggs, milk, 3 tablespoons chives, and 1/4 teaspoon freshly ground black pepper until blended.
- In 12-inch nonstick skillet, melt margarine on medium.
- Add egg mixture to skillet.
- As egg mixture begins to set around edge, move it gently toward center with spatula to allow uncooked eggs to flow toward side of pan.
- When eggs are partially cooked, after about 5 minutes, add salmon; cook 1 minute longer or until egg mixture is set but still moist, stirring occasionally.
- Sprinkle with remaining chives to serve.
