Turkey Meatloaf
- Vegetable oil spray
- 1 pound ground turkey breast
- 1 small onion, peeled and diced
- 1 green bell pepper, cored, seeded, deribbed and diced
- 1 cup dried bread crumbs, preferably whole wheat
- 1/2 cup, plus 2 tablespoons, tomato sauce
- 2 egg whites
- 1 tablespoon Worcestershire sauce
- 2 teaspoons salt
- Freshly ground pepper to taste
- Preheat the oven to 350 degrees.
- Spray a baking sheet lightly with vegetable oil and set aside.
- Place all ingredients in a large bowl and use your hands to mix gently until well combined.
- Shape the turkey mixture into a loaf and place on the baking sheet.
- Bake until firm to the touch, about 40 minutes.
- Cut into slices and serve with mashed potatoes and mushroom gravy.
