Broccoli Cheese Soup
- 2 bunches broccoli, cut up into small pieces
- 1 medium onion, chopped
- 3 tablespoons margarine, for sauteing
- 3 12 cups chicken broth
- 23 cup flour
- 2 12 cups milk or 2 12 cups cream
- 2 teaspoons paprika (or more)
- 2 teaspoons salt (or more)
- 2 cups cheddar cheese
- In a medium saucepan, saute the broccoli and onions until tender.
- Add the chicken broth.
- In seperate bowl, mix together the milk and flour.
- Bring the broth mixture to a boil and the slowly add the milk mixture, until smooth.
- Add spices to desired taste.
- Bring to a boil and let it thicken (gently).
- Add the cheese.
- Allow cheese to melt.
- Serve and enjoy!
