Pat's Yummy Stuffed Acorn Squash
- 1 medium acorn squash (approx. 1.5#)
- 12 cup chopped apple (one medium apple)
- 13 cup chopped cranberries
- 1 tablespoon melted butter
- 2 tablespoons maple syrup
- 12 teaspoon cinnamon
- 1 dash nutmeg
- pecan halves (to garnish)
- Cut the stem and opposite end from the squash so it will sit flat after you stuff it.
- Cut the squash in half and scoop out seeds and pulp.
- Spray a baking sheet with Pam or similar product.
- Place squash, cut side down on the baking sheet.
- Bake at 350 degrees for 35 minutes.
- While the squash is baking, Mix together the other ingredients.
- After 35 minutes, remove the squash from the oven and fill the squash cavity with the apple/cranberry mixture.
- Garnish with the pecan halves if desired.
- Return the squash to the oven and continue baking for another 25 minutes or until the squashs is tender.
