Cajun Frizzled Kale With Vegetarian Sausage

  1. Remove stems from kale and chop into thin strips.
  2. Dice green onion.
  3. Dice tomato.
  4. Mix yogurt, salt and Cajun seasoning , if desired.
  5. Let sit 5 minutes or more.
  6. Cook sausage according to package directions.
  7. When done, cut into 6 or so pieces.
  8. Heat oil in a small frying pan on high temperature until hot.
  9. Throw kale in, tossing occasionally.
  10. Cook until it begins to darken.
  11. If the kale burns a little, that's OK.
  12. Turn heat down.
  13. Add onion and tomatoes to kale.
  14. Cook until tomato pieces are warm.
  15. Add yogurt mixture to pan and cook until warm.
  16. It may separate some or get runny.
  17. That's OK.
  18. Add sausage to pan and stir well.
  19. Add lemon juice and stir.
  20. Remove from heat and eat.
