Spanish Salad
- 1 bunch fresh watercress, washed and well dried
- 1 boston lettuce, washed and well dried
- 2 endives, washed and well dried
- 1 apple, cored and sliced
- 1 cup cantaloupe, balls
- 2 tablespoons tarragon vinegar
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 12 lemon, juice of
- 1 pinch sugar
- salt, to taste
- black pepper, to taste
- place watercress in large bowl.
- tear boston lettuce leaves into pieces and add to bowl along with endives.
- add apple slices and cantaloupe balls, season well.
- mix together vinegar, mayonnaise, sour cream, lemon juice and sugar in small bowl.
- season well and pour over salad ingredients.
- toss until evenly coated, and serve.
