Triple Smoked Quinoa Pilaf

  1. Heat the olive oil in a large pan.
  2. Add the shallots, coriander and cardamom.
  3. Saute for a couple of minutes and then add the red pepper and garlic.
  4. When red pepper just begins to soften, add the tofu, orange peel, and green beans.
  5. Stir fry for a couple of minutes, and add the smoked paprika and dried tomatoes.
  6. Toss in the cooked quinoa and serve.
