Stir-Fried Diced Chicken with Peanuts

  1. Slice Chicken breast on a slant.
  2. Pat with the flat side of the Chinese cleaver.
  3. Dice.
  4. Rinse cabbage.
  5. Remove hard stems.
  6. Cut into 38 inch squares.
  7. Remove skin from the fried peanuts.
  8. Crush to small granules.
  9. Rinse chilies.
  10. Heat oil in a wok.
  11. Fry diced chicken and diced cabbage briefly.
  12. Remove when the color of the chicken changes.
  13. Save 3 tablespoons oil in the wok.
  14. Stir fry Chili Nam Yuey for a few seconds.
  15. Add diced chicken and cabbage.
  16. Mix well.
  17. Add the crushed peanuts, minced chilies and salt.
  18. Stir fry well.
  19. Remove and serve.
