Miss Jan's Fantasy Apple Cake
- 3 cups unbleached flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 cups sugar
- 3 large eggs
- 1 14 cups canola oil
- 1 teaspoon vanilla
- 14 cup orange juice
- 2 cups grated apples, with peel
- 1 cup chopped walnuts
- 1 cup flaked coconut
- 12 cup buttermilk
- 12 cup butter
- 1 cup sugar
- 12 teaspoon baking soda
- preheat 325F.
- sift together flour, baking soda, cinnamon, and salt.
- In a large bowl combine sugar, eggs, oils, vanilla and orange juice- beat until well-belnded.
- stir in flour mix, fold in apple, nuts and coconut.
- spoon batter into well-greased and floured 10x4inch angel cake tube pan.
- bake 90 minutes.
- mix butternilk saucewhen cake in oven- heavy-bottomed saucepan, combine buttermilk, butter and sugar and heat over medium heat, stirring constantly until it boils.
- Add baking soda and stir like crazy!
- Careful it doesn't overflow!
- Turn off heat and allow sauce to sit.
- when cake is done, remove and cool in pan 15 minutes.
- reheat sauce on low.
- puncture cake deeply top to bottom all over with spoon handle- go crazy!
- Paint entire surface of cake until all used and let absorb sauce at least 1 hour before cutting.
