Barbecued Kabobs Recipe

  1. In small saucepan, saute/fry onion in oil till transparent.
  2. Add in tomato juice, brown sugar, vinegar, and cayenne; bring to a boil.
  3. Lower heat and simmer barbecue sauce, uncovered, 10 min.
  4. Wash potatoes but don't peel.
  5. Cook in small amount boiling salted water till tender; drain.
  6. Seed and cut green pepper into 16 pcs.
  7. Cut each onion into 4 wedges.
  8. Alternate potato, green pepper, Spam, mushrooms, and onions on long skewers.
  9. Place on broiling pan; brush with barbecue sauce.
  10. Broil at least 3 inches from heat source 15 min, turning and brushing with sauce after 5 and 10 min.
  11. This recipe yields 8 skewered kabobs.
  12. Yield: 8 kabobs
