Barbecued Kabobs Recipe
- 1/4 c. chopped onion
- 2 Tbsp. veg. oil
- 1 can tomato juice - (6 ounce)
- 1 Tbsp. brown sugar
- 1 Tbsp. cider vinegar
- 1 dsh cayenne
- 4 sm red potatoes halved
- 1 lrg green pepper
- 2 sm onions
- 1 can Spam luncheon meat - (12 ounce) cubed
- 8 x mushrooms
- In small saucepan, saute/fry onion in oil till transparent.
- Add in tomato juice, brown sugar, vinegar, and cayenne; bring to a boil.
- Lower heat and simmer barbecue sauce, uncovered, 10 min.
- Wash potatoes but don't peel.
- Cook in small amount boiling salted water till tender; drain.
- Seed and cut green pepper into 16 pcs.
- Cut each onion into 4 wedges.
- Alternate potato, green pepper, Spam, mushrooms, and onions on long skewers.
- Place on broiling pan; brush with barbecue sauce.
- Broil at least 3 inches from heat source 15 min, turning and brushing with sauce after 5 and 10 min.
- This recipe yields 8 skewered kabobs.
- Yield: 8 kabobs
