Caribbean Mango Marinade

  1. place mango, chilli and rum in food processor and puree
  2. combine with garlic and ginger in medium saucepan and bring to a boil
  3. reduce heat and simmer 15 to 20 min.
  4. remove from heat and let cool
  5. whem cool, stir in coconut milk, lime juice, and cilantro.
