Caribbean Mango Marinade
- 1 1/2 cup or 2 mangos, ripe, peeled and chopped
- 1 whole habenero chili( or jalapena for a more mild marinade)
- 1 tbsp dark rum
- 2 clove garlic, minced
- 1 tbsp ginger, minced
- 1/2 cup coconut milk
- 1/4 cup lime juice
- 2 tbsp fresh cilantro, finely chopped
- 1/2 tsp salt
- place mango, chilli and rum in food processor and puree
- combine with garlic and ginger in medium saucepan and bring to a boil
- reduce heat and simmer 15 to 20 min.
- remove from heat and let cool
- whem cool, stir in coconut milk, lime juice, and cilantro.
