Tangy Turkey Burritos
- 1 14 lbs ground turkey (cheaper than ground turkey breast)
- 14 ounces of goya frozen sofrito sauce, thawed (find in the ethnic section of your grocers freezer)
- 1 green bell pepper
- 1 cup corn (frozen is fine)
- 1 small white onion, chopped
- 12 cup shredded cheddar cheese or 12 cup manchego cheese
- 10 medium flour tortillas
- tomatoes, and shredded lettuce as a topper
- sour cream
- 1) Chop the white onion and Bell Pepper, discarding all waste.
- 2) Pour some thawed sofrito sauce into a deep pan with the vegetables until the onion is translucent and the bell pepper loses a bit of its crunch.
- 3) Add 1 package of Ground Turkey and 2/3 of the remaining sauce.
- Cook until the meat is cooked all the way thru.
- 4) Add the frozen corn and the remainder of the sauce, allowing the corn to heat through.
- 5) Place 4 flour tortillas in the microwave with a damp paper towel covering them, microwave for 15-20 secs.
- 6) Assemble the tortillas into burritos serving with diced tomato and lettuce, and a dollop of sour cream.
- Serve with a side of rice or pico de gallo.
