Scalloped Cabbage
- 1 medium head cabbage
- 2 Tbsp. butter or margarine
- 1 1/2 to 2 Tbsp. flour
- 1 c. milk
- 2 Tbsp. chopped onion
- 2 Tbsp. chopped seeded green pepper
- 1 Tbsp. vegetable oil
- 1/2 c. bread crumbs
- 1 c. or less grated cheese
- Chop
- and
- cook
- the
- cabbage
- just until crisp-tender; drain. To prepare cream sauce, melt margarine.
- Stir in flour until smooth and add
- milk.
- Cook
- over
- medium
- heat and stir until thick. Saute green pepper and onion in oil until tender. Place layer of cabbage
- in
- a
- lightly
- greased
- baking
- dish. Sprinkle with sauteed
- onion,
- pepper and grated cheese. Cover with cream sauce and bread crumbs.
- Bake about 10 minutes in a 350u0b0 oven.
