Yummy Applesauce Bran Muffins
- 1 12 cups all-bran cereal
- 1 cup oat bran
- 34 cup wheat bran
- 12 cup old fashioned oats (not instant)
- 2 12 cups boiling water
- 2 cups whole wheat flour
- 12 Splenda sugar substitute
- 2 tablespoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 cups fat-free buttermilk
- 34 cup unsweetened applesauce
- 12 cup egg substitute
- 18 cup canola oil (can use 1/4 C canola and no flax oil)
- 18 cup canola oil
- flax seed (I use these generously in mine)
- raisins
- mashed banana
- Combine bran cereal, oat bran, wheat bran and oats in a large bowl.
- Pour in boiling water and stir until moistened.
- Set aside for 15 minutes.
- Combine whole wheat flour, sugar substitute, baking sida, cinnamon, and salt in a bowl.
- Mash out lumps in bran mixture.
- Stir in buttermilk applesauce, egg substitute and oil until smooth.
- Stir in flour mixture and stir until smooth.
- Batter will be thick and using an electric mixture makes it easier.
- The batter can keep in your refrigerator for up to 3 weeks so you can bake muffins as you need them or bake them all at once.
- The muffins freeze well too.
- Pour into paper lined muffin pan.
- Bake until puffed and golden brown, about 25-30 minutes.
- Cool muffins 3 minutes.
