Cheery Cherry Muffins

  1. Preheat oven to 350F (180C).
  2. Grease muffin cups.
  3. In a large mixing bowl, combine flour, sugar, cherries, baking powder and salt.
  4. In a separate bowl, mix milk, oil, cherry juice, egg, and almond extract.
  5. Make a well in the dry ingredients and stir in liquid.
  6. Fill muffin cups 23 full.
  7. Combine almonds and remaining sugar; sprinkle over batter.
  8. Bake at 350F (180C).
  9. for 25 to 30 minutes.
  10. Cool 10 minutes before removing from muffin cups.
