Mexican Stuffed Chicken Breasts Recipe

  1. Divide chicken breasts in half and lb.
  2. till flattened.
  3. Combine butter with cheeses, chilies and onions.
  4. Place a portion of mix at the end of each chicken breast and roll up, tucking in ends to completely enclose filling.
  5. Dip each roll in melted butter, then coat with mix of cracker crumbs and taco seasoning.
  6. Arrange coated rolls in a circle in baking dish.
  7. Cover with waxed paper.
  8. Cook in microwave on HIGH for 10 to 12 min.
  9. Let stand for 5 min before serving.
