bourbon Chicken
- 1 12 lbs boneless skinless chicken breasts, cut into bite-sized chunks
- 14 cup cornstarch
- 14 teaspoon salt
- 2 tablespoons canola oil
- 2 garlic cloves, minced
- 13 cup orange juice concentrate
- 12 cup water
- 14 cup soy sauce
- 1 tablespoon apple cider vinegar
- 14 teaspoon minced ginger
- 12 teaspoon crushed red pepper flakes
- 14 cup brown sugar, loosely packed
- 1 tablespoon ketchup
- Mix cornstarch and salt.
- Toss chicken in cornstarch/salt mixture until lightly coated.
- Heat oil in large skillet.
- Add garlic and saute.
- Add chicken chunks and cook quickly until chicken browns.
- Remove chicken and set aside.
- Allow pan to cool slightly.
- After the skillet has slightly cooled, add the rest of the ingredients and stir until the brown sugar has dissolved.
- Bring to a boil.
- Add chicken back in, reduce heat to low, and simmer until chicken is cooked through and the sauce has thickened, about 15 minutes.
- Serve over rice.
