Parsley-Caper Broiled Fish
- 2 SERVINGS
- 1 1/4-inch-thick onion slice
- 2 fresh parsley sprigs
- 2 anchovies
- 2 teaspoons drained capers
- 1 small garlic clove
- 2 6-ounce orange roughy fillets (about 3/4 inch thick)
- 1/2 lemon
- Preheat broiler.
- Mince first 5 ingredients together.
- Brush baking sheet lightly with oil.
- Place fish on prepared baking sheet.
- Sprinkle onion mixture over fish.
- Season with pepper.
- Broil until fish is just cooked through, about 5 minutes.
- Squeeze lemon over fish and serve.
