Latin eggs

  1. Fry/pouch the eggs then set aside.
  2. Lightly butter the 2 pieces of the whole wheat bread.
  3. And place on a clean plate topped with the fried/pouches egg, 1 egg for each slice of bread.
  4. Set aside.
  5. On a separate bowl add the onions, tomatoes, celery, bellpepper, chopped dried red pepper, and coriander.
  6. Add in the mixture the spices: paprika, lemon juice, honey, oil, salt, and pepper.
  7. Mix thoroughly until all are coated with the oils and spices.
  8. Taste and adjust accordingly.
  9. Take off the eggs from top of the toast.
  10. Scoop out some of the juice of the salsa and soak the toasted bread with the juice.
  11. Put back the eggs and top generously with the salsa.
  12. Eat!
  13. and Enjoy!
