Wild Rice Salad

  1. Bring the water to a boil and add the rice.
  2. Cook until tender.
  3. Heat a frying pan and add the pine nuts to toast.
  4. Transfer to a large bowl.
  5. Add the rice, peppers, scallions, garlic, basil and thyme.
  6. In a cup, whisk together the vinegar, lemon juice, oil and mustard.
  7. Toss with the rice mixture.
  8. Top with feta cheese and serve warm.
