Summer Cucumber Rice

  1. Bring 1 cup water to boil in small saucepan.
  2. Add rice, cover with a lid and boil 5 minutes.
  3. Remove from heat, add oil and set aside, covered, 5 minutes.
  4. Meanwhile, mix cucumber, mint and yogurt in serving bowl.
  5. Add rice and salt and pepper to taste.
  6. Toss well.
  7. Note may add garlic and lemon juice -- mainly a note to me to try this.
