sig's herring salad
- 3 salted or mild pickled herrings
- 1 small peeled, cooked beetroot ,cooked until soft all the way through , finely chopped, set aside a tablespoon of the boiling juice
- 1 large carrot,cut into julienne, very fine strips, cooked until soft .
- 1 tbsp mascarpone
- 1 tsp fine sugar
- 1 tsp balsamic vinegar (only use half a teaspoon or to taste if using pickled herring)
- 1 pinch each sea salt and fresh cracked black pepper, or to taste
- If the herring is very salty put in milk for half an hour to drain out some of the salt then chop into little equal sized pieces
- boil the beetroot and very fine julienned carrots in a little water with the sugar until soft ,
- cool down ,chop beetroot into tiny cubes.
- mix carrots and beetroot with balsamic vinegar, add a little sugar if not sweet enough
- mix with the mascarpone ,If not moist enough mix with some of the juice set aside.
- this makes 2 main meal salads or 4 starter salads.
- serve with peppery green salad leaves
