Black Sesame Sushi

  1. Peel and blend parsnip in food proccessor until consistency of rice.
  2. Add mirin, rice vinegar, toasted sesame oil and black sesame seeds.
  3. Assemble parsnip mix on nori sheets.
  4. Top with pea shoots.
  5. Layer on avocado, cucumber and red pepper slices in thin strip across nori.
  6. Sprinkle over fresh coriander, grated ginger.
  7. Roll sushi lightly wetting furthest end of nori to help it stick together.
  8. Slice and serve with wasabi.
