Broccoli, Cauliflower, And Cheddar Soup Recipe

  1. Bring broth, onion, broccoli, cauliflower, and potato to a boil in a 4 qt saucepan.
  2. Reduce heat, cook covered, 10 min.
  3. Remove 1 c. plus broccoli and cauliflower pcs, set aside.
  4. Cook soup 10 min longer.
  5. Chop cheese into blender, add in lowfat milk.
  6. Ladle in a small amount of vegetable broth.
  7. Puree till very smooth.
  8. Pour into large bowl and continue to puree broth till done.
  9. (Beware - it's warm!)
  10. Return pureed soup to pan with reserved vegetables and heat through, but don't boil or possibly cheese will curdle.
  11. Add in salt and pepper.
