Maman's Salade de Carottes Rapees (Carrot Salad)
- 1 large Carrot
- 1/3 tsp - depends on the size of the carrot. Salt
- 1 tbsp Olive oil
- 1 tsp - adjust (to taste) Honey
- 1 tsp - adjust (to taste) Wine vinegar (or lemon juice or rice vinegar)
- 1 tbsp Grated onion
- 1 Black pepper
- 1 tbsp Sour cream (optional)
- 1 generous amount Walnuts or almonds (coarsely chopped)
- Shred the carrot, sprinkle with salt and leave for 5 to 10 minutes.
- When the color turns very bright, massage with your hands and then squeeze out well to remove any extra moisture.
- Add the ingredients to a bowl and mix to make the dressing.
- Add the carrot to the bowl, and mix well.
- Add sour cream to taste.
- Add the walnuts plus raisins, parsley etc.
- and mix together to finish.
- This tastes better if you rest it for a while so that the flavors can blend together.
- It's good without the grated onion and sour cream, too.
- Here I added some salted and massaged celery too.
- You can keep this in the refrigerator for 4 days.
