Maman's Salade de Carottes Rapees (Carrot Salad)

  1. Shred the carrot, sprinkle with salt and leave for 5 to 10 minutes.
  2. When the color turns very bright, massage with your hands and then squeeze out well to remove any extra moisture.
  3. Add the ingredients to a bowl and mix to make the dressing.
  4. Add the carrot to the bowl, and mix well.
  5. Add sour cream to taste.
  6. Add the walnuts plus raisins, parsley etc.
  7. and mix together to finish.
  8. This tastes better if you rest it for a while so that the flavors can blend together.
  9. It's good without the grated onion and sour cream, too.
  10. Here I added some salted and massaged celery too.
  11. You can keep this in the refrigerator for 4 days.
