Bavarois

  1. Soak the gelatin power in "A" water for 2 ~ 3 minutes.
  2. Heat "B" ingredients in a pot and melt the sugar.
  3. Pour "A" into "B" and mix briefly.
  4. Beat the eggs in a bowl.
  5. Pour Step 1 mixture in the bowl slowly, then strain.
  6. Chill the mixture in a larger bowl with cold water.
  7. Add "C" ingredients and thicken.
  8. Whip the heavy cream, add to the bowl quickly.
  9. Pour in a mold (don't whip the heavy cream until firm!
  10. Whip it until slightly thickened).
  11. Chill and it's done!
  12. Garnish with iyokan citrus fruit.
