Savory Chicken Soup
- 2 qt. rich chicken broth, fat removed
- 1/4 tsp. rosemary
- 1/4 tsp. thyme
- 1/4 tsp. poultry seasoning
- 1 tsp. dried parsley
- 1/2 tsp. celery salt
- 1/8 tsp. white pepper
- 3 Tbsp. finely chopped onion
- 1 carrot, diced
- 1/2 c. peas
- 1/2 c. finely chopped chicken
- 1/2 tsp. salt
- 1/2 c. regular raw rice (white or brown)
- 1 Tbsp. cornstarch
- dash of cayenne pepper (if desired)
- In a stock pot, combine broth, seasonings, vegetables, chicken and rice.
- Bring to a boil; reduce heat and simmer about 30 minutes or until vegetables and rice are tender.
- Add a little cold water to cornstarch and stir into soup to thicken.
- Simmer 5 minutes.
- Taste for seasoning and add a dash of cayenne pepper, if desired.
