Peanut, Orange, and Carrot Salad

  1. In a medium microwave-able bowl, microwave the peanut butter for about 10 seconds to soften.
  2. Whisk in the tamari, orange juice and ginger; stir in a splash of hot water if the sauce begins to tighten up.
  3. Stir the carrots into the dressing and toss.
  4. Scatter the scallions and peanuts on the salad; season to taste with salt and pepper.
  5. Best if allowed to chill in the refrigerator for a bit.
