Special Jello Salad

  1. Stir to dissolve jello in 3 cups boiling water.
  2. Add 3 cups cold water.
  3. Pour into 9x13 glass dish.
  4. Add the drained pineapple, sliced bananas, and marshmallows.
  5. Refrigerate til set.
  6. Meanwhile, in top of double boiler cook the reserved pineapple juice (its okay if bits of pineapple are in the juice) with the egg, sugar and flour, stirring til thick.
  7. Remove from heat and add the cream cheese, stirring til smooth.
  8. Cool completely.
  9. Gently mix in the Cool Whip.
  10. Spread the mixture on top of jello.
  11. Sprinkle with coconut and nuts if desired.
  12. Refrigerate about 2 more hours.
  13. Enjoy!
