Eggs on Potato Chips

  1. In a non-stick pan with a tight fitting lid.
  2. Saute chopped onion until soft.
  3. Stir in minced garlic, minced chilies, add chopped cilantro.
  4. Crumble in potato chips, tossing to combine.
  5. Make 4 nests (indents) on the surface of the chip mixture.
  6. Crack an egg into each indentation.
  7. Pour water down the side of the mixture and pan to generate steam.
  8. Cover tightly; reduce heat to low, let eggs cook until set.
  9. 6-8 minutes.
