Chicken Fricassee

  1. Cut the chicken into chunks and sprinkle with salt and pepper.
  2. Heat butter in a large high-sided skillet over medium heat.
  3. Cook the chicken, 3-5 min.
  4. per side, until golden.
  5. Remove the chicken and set aside.
  6. Add the onions to the pan.
  7. Cook 5 min.
  8. stirring occasionally until tender, not browned.
  9. Stir in flour, cook for 1 min.
  10. Reduce heat to medium-low.
  11. Whisk in chicken broth.
  12. Whisk constantly and bring to a boil.
  13. Add carrots, thyme, pepper, salt, peppers, and sweet potato to the pan.
  14. Reduce heat to low.
  15. Cover tightly and cook for 20-30 minutes
  16. Stir in milk and serve.
