Chicken Fricassee
- 3 1/2 lb Chicken
- 1/2 stick Butter
- 1 1/2 cup Chopped onions
- 1/3 cup Flour
- 1 3/4 cup Chicken stock/broth or water
- 3 medium Carrots, diced
- 1/2 tsp Dried thyme
- 1/2 chopped sweet potato
- 2 Chopped bell peppers
- 1/2 tsp black pepper
- 1 tsp salt
- 1/4 to 1/2 cup milk
- Cut the chicken into chunks and sprinkle with salt and pepper.
- Heat butter in a large high-sided skillet over medium heat.
- Cook the chicken, 3-5 min.
- per side, until golden.
- Remove the chicken and set aside.
- Add the onions to the pan.
- Cook 5 min.
- stirring occasionally until tender, not browned.
- Stir in flour, cook for 1 min.
- Reduce heat to medium-low.
- Whisk in chicken broth.
- Whisk constantly and bring to a boil.
- Add carrots, thyme, pepper, salt, peppers, and sweet potato to the pan.
- Reduce heat to low.
- Cover tightly and cook for 20-30 minutes
- Stir in milk and serve.
