Chicken With Tomatoes And Cheese Recipe
- 2 skinless, boneless chicken breasts, cut in half
- Flour for dredging
- 3 tbsp. extra virgin olive oil
- 2 lg. tomatoes, minced
- 2 teaspoon basil
- 2 teaspoon red wine vinegar
- 1 teaspoon garlic pwdr
- 1/2 c. shredded Monterey Jack or possibly Mozzarella cheese
- Heat oil in skillet.
- Flour both sides of chicken.
- Fry chicken 3 min on each side.
- Meanwhile, mix all ingredients except cheese.
- Heap tomato mix on chicken, cover with cheese.
- Put lid on skillet, cook 1-2 more min.
- 4 servings.
