Shaved Beet Salad

  1. Using a mandoline or sharp chefs knife, slice beets into very thin rounds.
  2. In a large bowl, whisk together orange zest and juice, vinegar, oil, and sugar; season with salt and pepper.
  3. Add beets, and toss to coat.
  4. Serve immediately.
