Ww 3 Pt. Raspberry Cocktail
- 12 cup unsweetened raspberry (fresh is best but if using frozen, defrost after measuring)
- 1 tablespoon black currant liqueur
- 1 cup dry white wine
- 4 ice cubes
- Chill two 6-ounce glasses.
- In a blender, process raspberries until smooth.
- Strain through fine sieve into small saucepan, forcing raspberries through.
- Discard seeds.
- Add liqueur to saucepan and cook over medium heat.
- stirring frequently and skimming foam from surface when necessary, until mixture is thickened and reduced by half; 4 to 5 minutes.
- Transfer raspberry mixture to a small bowl; cover with plastic wrap and refrigerate until chilled, about 1 hour.
- To serve, divide raspberry mixture into chilled glasses; Add 1/2 cup wine and 2 ice cubes to each glass and stir.
- Serve immediately.
