Freeze or Eat Meatballs In Wine Sauce
- 1 12 lbs ground beef
- 14 cup Italian breadcrumbs
- 14 cup walnuts, finely chopped
- 1 onion, finely chopped
- 1 clove garlic, pressed
- 2 tablespoons parmesan cheese, grated
- 12 teaspoon dried basil
- 1 teaspoon salt
- 1 egg, lightly beaten
- 3 tablespoons sour cream
- 14 cup butter
- 1 clove garlic, pressed
- 12 cup red wine
- Combine all but the last 3 ingredients and mix thoroughly.
- Shape into 1 1/2" balls.
- Heat butter in a frying pan, cook garlic 1 min, add meatballs to pan and brown on all sides.
- Remove to a dish or freezer container.
- Add wine to pan and scrape up all browned bits.
- To serve without freezing, return meatballs to the pan and simmer 20 mins (add more wine if additional liquid is needed).
- To freeze, pour liquid over meat balls, cool and freeze.
- To serve, defrost and reheat adding more wine if needed.
