Mexican Pork With Rice Recipe
- 1 pound fresh pork, cut into thin slices
- 2 tbsp. vegetable oil
- 1/4 teaspoon garlic pwdr
- 1 c. water
- 2 teaspoon salt
- 1/2 teaspoon oregano
- 3 c. warm cooked rice
- 1 c. minced onions
- 6 ounce. tomato paste
- 15 ounce. (1 can) pinto beans
- 1/2 teaspoon grnd cumin
- 1 1/2 teaspoon chili pwdr
- In a large skillet, brown pork in oil over medium heat.
- Add in onions and garlic pwdr; saute/fry lightly.
- Stir in tomato paste and water.
- Cover and simmer about 30 min.
- Add in beans and seasoning and simmer for 15 min longer.
- Serve over fluffy white rice.
