Linguini with Zucchini and Bacon
- 8 ounces, weight Linguini
- 1/2 Tablespoons Butter
- 1/2 Tablespoons Olive Oil
- 2 Small Zucchini, Sliced In Quarters
- 1 Small Onion, Sliced In Quarter Rings
- 2 cloves Garlic, Minced
- 4 slices Bacon, Fried And Crumbled
- 1/2 cups Shaved Parmesan
- Salt And Pepper, to taste
- Additional Shaved Parmesan, If Desired
- Cook the pasta according to the package directions, liberally salting the water.
- While the pasta cooks, heat the butter and olive oil over medium heat.
- Add squash, onion, and garlic and cook until onion is softened and squash has cooked to the tenderness you desire.
- Drain pasta, reserving about 1/2 cup of the cooking water.
- Add vegetables and bacon to the pasta and toss, adding cooking water to loosen the pasta if needed.
- Add shaved Parmesan and toss lightly.
- Add salt and pepper to taste.
- Serve immediately with additional shaved Parmesan cheese, if desired.
