Basic Vegetable Stock
- 2 quarts water
- 1 cup dry white wine
- 1 thickly sliced large onion
- 1 leek, sliced
- 1 carrot, coarsely chopped
- 1 stick celery, chopped
- 4 cups mixed chopped vegetables (broccoli, green beans, cabbage, potatoes, squash, bell peppers, mushrooms)
- 6 -8 sprigs parsley
- 1 bay leaf
- 4 allspice berries
- 1 tablespoon black peppercorns
- 2 teaspoons dried bouquet garni
- salt
- Combine all ingredients except salt in slow cooker.
- Cover and cook on high for 3-4 hours.
- Strain stock, discarding solids.
- Season to taste with salt.
